    prepare banana stem

    Trim the outer fibrous layers from the banana stem until you reach the tender core. Slice the tender core thinly into rounds or small matchsticks. Immediately place the cut pieces in a bowl of water with a tablespoon of lemon juice (or a splash of tamarind water) to prevent discoloration and reduce stickiness.

    Drain the lemon/tamarind water before cooking and give the pieces a quick rinse. Set aside.

    Heat a 3–4 quart (liter) saucepan over medium heat. Add 1 tablespoon oil and sauté the sliced shallots for 3–4 minutes until translucent and slightly softened.

    Add the minced garlic and slit green chili. Sauté for another 1–2 minutes until garlic is fragrant but not browned.

    Add the sliced banana stem to the pan and stir to combine with the aromatics. Cook for 4–5 minutes, stirring occasionally, so the banana stem begins to soften and release moisture.

    Pour in 4 cups of water or vegetable stock. Stir, bring to a gentle boil over high heat, then reduce to a simmer. Cover and simmer for 15–20 minutes, until banana stem pieces are tender and easily pierced with a fork.

Blending & Seasoning

    Once tender, taste and remove 4–6 tablespoons of the cooked banana stem pieces and set aside (these will be returned to the soup to provide texture).

    Use an immersion blender to purée the remaining soup to a smooth or slightly coarse consistency according to preference. Alternatively, transfer in batches to a countertop blender and blend until smooth; return to the pot. If the soup is thicker than desired, add up to 1 cup more water or stock to reach the preferred consistency.

    Stir the reserved chunky banana stem pieces back into the puréed soup for texture.

    Season with 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Add 1 tablespoon lemon juice or tamarind extract, stir, and adjust seasoning to taste (add more salt or lemon/tamarind if needed). Keep warm on low heat for 2–3 minutes to meld flavors but do not boil vigorously after adding lemon.

Tempering (Tadka) & Garnish

    In a small skillet, heat 1 tablespoon oil over medium heat. Add 1/2 teaspoon mustard seeds and wait for them to pop. Add 1 teaspoon urad dal and stir until the dal turns golden brown (about 30–45 seconds).

    Add the broken dry red chili and 10 curry leaves to the oil and fry for 10–15 seconds until the leaves become crisp and fragrant. Be careful not to burn the spices.

    Pour the hot tempering directly into the soup. Stir to distribute the flavors.

    Turn off heat. Garnish with chopped cilantro. Serve hot.
