    Boil potatoes

    Place the peeled and cubed potatoes in a pot of salted water. Bring to a boil and simmer 10–12 minutes until tender when pierced with a fork. Drain well and let cool slightly.

    Mash potatoes

    Mash the drained potatoes until smooth with a potato masher or fork. Set aside in a bowl.

    Temper and cook aromatics

    Heat 1 tablespoon vegetable oil in a small skillet over medium heat. Add mustard seeds. When they begin to pop (about 20–30 seconds), add cumin seeds and asafoetida. Sauté 10 seconds, then add chopped green chili, grated ginger and curry leaves. Cook 30–45 seconds until fragrant.

    Spice the potatoes

    Lower heat to medium-low. Add turmeric, coriander powder, red chili powder and garam masala to the skillet and stir for 10–15 seconds to bloom the spices. Immediately add the spice mixture to the mashed potatoes and mix thoroughly so spices are evenly distributed.

    Finish filling

    Add salt, chopped cilantro and lemon juice to the mashed spiced potatoes. Taste and adjust seasoning. Divide the mixture into three equal portions and shape each into a smooth ball (about golf-ball size). If mixture feels sticky, lightly dust hands with semolina or breadcrumbs.

Coating batter

    In a bowl, whisk together besan, rice flour, baking powder, turmeric, red chili powder, ajwain (or cumin powder) and salt until uniform. Gradually add cold water while whisking to form a smooth, lump-free batter with a consistency that coats the back of a spoon (thick but pourable). Let batter rest 5 minutes; if it thickens too much, add a splash more water.

Assembly & frying

    Heat oil in a deep, heavy-bottomed pan or kadai to 350°F (175°C) or until a small drop of batter sizzles and rises slowly to the surface. Maintain medium heat — oil should be hot enough to cook through without burning the outside.

    (Optional) Lightly roll each potato ball in a little semolina or fine breadcrumbs to help batter adhere and add extra crunch.

    One at a time, dip a potato ball into the batter, turning to coat evenly, allowing excess batter to drip back into the bowl. Carefully lower the coated ball into the hot oil using a slotted spoon.

    Fry in batches of 2–3 (depending on pan size) without overcrowding. Fry, turning occasionally, until the coating is deep golden brown and crisp, 4–6 minutes per batch. Adjust heat as needed so coating cooks through without over-browning.

    Use a slotted spoon to transfer cooked bondas to a plate lined with paper towels to drain. Let rest 1–2 minutes so interior stays piping hot but not steaming wet.
