Vadai batter & frying

    Soak dal

    Rinse 1 cup urad dal under cold water until water runs clear. Soak the dal in about 1 cup of water for 4–6 hours at room temperature (or 2–3 hours in a warm place) until grains are swollen and soft.

    Grind batter

    Drain soaked urad dal. In a wet grinder or high-speed blender, grind dal with minimal water (start with 2–3 tablespoons) to a smooth, light, and fluffy batter. Scrape sides and add water sparingly; final batter should be thick but pipeable — similar to a thick pancake batter. Transfer batter to a bowl.

    Season batter and whip

    To the batter add 1 tsp semolina or 1 tsp rice flour (helps hold shape), 3 tsp salt (adjust to taste), 1 tsp crushed black pepper, 1 green chili finely chopped, 1 tsp finely grated ginger, 1 tsp cumin seeds, a pinch of asafoetida and 6 curry leaves finely chopped. Whip/beat the batter vigorously for 2–3 minutes with a spoon or hand blender to incorporate air; batter should be light and slightly fluffy.

    Shape and fry vadas

    Heat about 2 cups oil in a deep pan over medium heat until oil reaches 170–175°C (340–350°F) or a small batter drop sizzles and rises slowly without burning. Wet your hands or use a spoon to take a golf-ball-sized portion of batter (about 2–3 tbs). Shape into a smooth ball, make a small indentation in center to form a ring if desired, or keep as round lumpy vadai. Carefully slide into hot oil. Fry 2–3 vadas at a time (do not overcrowd) on medium heat, turning occasionally, until golden brown and cooked through — about 4–6 minutes. Remove with slotted spoon and drain on paper towel. Repeat for total 2 vadas (this recipe yields 2 pieces as requested; if making more, adjust quantities).

    Soak vadas in water (quick soak)

    While frying the last vadai, bring a shallow bowl of warm water. Immediately transfer hot fried vadas into the warm water and let them soak for 5–7 minutes so they become soft and absorb moisture. This step is essential for the dahi vada texture.

    Squeeze excess water

    After soaking, gently squeeze each vada between fingers to remove excess water but keep them soft. Place squeezed vadas on a small plate.

    Prepare yogurt mixture

    Whisk 1 cup plain yogurt until smooth. Add 1/4 cup water to thin slightly so it can coat the vadas (consistency: pourable but not watery). Season with 1/4 tsp salt and 1/2 tsp sugar (optional) and mix well. Taste and adjust salt/sweetness.

    Soak vadas in yogurt

    Pour about half of the yogurt mixture onto the plate covering the bottom. Place the squeezed, softened vadas onto the yogurt and spoon remaining yogurt evenly over each vada so they are well coated. Let vadas rest in yogurt for 15–30 minutes in refrigerator or at room temperature so flavors meld and vadas soak up yogurt.

Toppings & tempering

    Prepare tempering

    In a small pan heat 1 tsp oil over medium heat. Add 1/2 tsp mustard seeds; when they begin to pop, add 1/2 tsp urad dal and 1/2 tsp chana dal. Fry until dals turn golden brown. Remove from heat.

    Finish and garnish

    Sprinkle the tempering and its cooking oil over the yogurt-coated vadas. Dust 1/2 tsp roasted cumin powder and 1/2 tsp red chili powder over the top (adjust to taste). Scatter 1 tbsp chopped coriander leaves and 1 tbsp pomegranate seeds (if using). Drizzle 2 tbs tamarind chutney and 1 tbs green chutney decoratively or serve on the side.

    Serve chilled or at room temperature. Eat within 1–2 hours for best texture — vadas should be soft and creamy from yogurt, with the tempering and chutneys providing contrast.
