Prepare banana stem

Sauté aromatics
In a heavy-bottomed pot, heat 1 tablespoon oil on medium. Add mustard seeds and wait until they start to pop. Add cumin seeds, then add minced garlic, chopped onion, and halved shallots (if using). Sauté 3–4 minutes until onion is translucent and garlic is fragrant.

Add spices and banana stem
Add turmeric powder, asafoetida, freshly ground black pepper and slit green chili. Stir 30 seconds, then add the drained banana stem slices and bruised lemongrass (if using). Sauté 3–4 minutes so the banana stem heats through and picks up the flavors.

Simmer
Pour in 4 cups water or vegetable stock. Bring to a gentle boil, then reduce heat and simmer uncovered for 15–20 minutes, until banana stem is tender but still retains slight bite. If you prefer softer texture, simmer up to 25 minutes.

Adjust seasoning and blend (optional)
Remove bruised lemongrass. Taste and adjust salt. For a smoother, slightly thickened soup, remove 1 cup of the mixture and lightly mash or pulse with an immersion blender, then return to the pot; alternatively blend 1–2 cups and stir back in. This keeps body while retaining some shredded texture.

Tempering
In a small pan, heat 1 tablespoon oil over medium heat. Add a few curry leaves and a pinch of mustard seeds; allow them to splutter for 20–30 seconds. Pour this hot tempering over the soup to add aroma.

Stir in chopped coriander leaves and 1 teaspoon lemon juice. Give one final taste and adjust salt or pepper if needed.
To serve

Ladle the vazhaithandu soup into bowls, garnish with extra coriander leaves and a few fresh curry leaves. Serve hot with steamed rice, idli, dosa or as a light starter. Store leftovers in refrigerator up to 2 days.
