Vadai Dipped Sambar /rasam(2 Pcs.) Recipe
Medhu vada soaked in lentil sambar or rasam which makes it soft and tender. It is served with finely chopped onion and coconut chutney.

Vadai (Medhu vada)

Soak and grind
Rinse 1 cup urad dal in water 2–3 times and soak in fresh water for 4–5 hours (or overnight). If using, soak 2 tablespoons cooked rice with the dal. Drain the dal and grind to a smooth, fluffy batter using minimal water — add water sparingly (1–2 tablespoons) while grinding. The batter should be thick and airy. Transfer to a bowl.

Whip and season
Whisk the batter vigorously for 3–5 minutes to incorporate air. Add finely chopped green chili, grated ginger, chopped curry leaves, crushed black pepper, and 3 teaspoons salt. If desired, sprinkle 1/4 tsp baking soda and fold gently just before frying. The batter should hold shape on a spoon but be soft enough to drop.

Shape vadas
Wet your hands. Take a golf-ball sized portion of batter, flatten it on your palm to form a disc about 2.5–3 inches wide and make a hole in the center with your thumb to form a doughnut shape. Repeat to make 2 vadas (this recipe yields 2 pieces).

Fry
Heat about 1 cup oil in a deep frying pan over medium heat until shimmering (about 350°F / oil should form a small bubble around a drop of batter). Carefully slide the shaped vadas into the oil. Fry on medium heat — first few minutes without disturbing so they set, then gently flip and fry until golden brown and crisp, about 3–4 minutes per side. Remove and drain on paper towels. Keep warm.
Sambar (for dipping)

Prepare base
In a small saucepan, bring 1 cup water to a gentle simmer. Add 2 tablespoons tamarind extract, 1 tablespoon sambar powder, 1/4 tsp turmeric, and 1/2–3/4 tsp salt. Stir to dissolve.

Add cooked dal
Whisk in 1/2 cup cooked, mashed toor dal (or use pre-cooked dal). Add 1/2 tsp jaggery or brown sugar if using, and adjust water to reach a slightly thin, pourable consistency (about 1 cup total liquid). Simmer gently for 5 minutes so flavors meld. Adjust seasoning.

Cook rasam base
In a saucepan, add 1 cup water, 2 tablespoons tamarind extract and 1/2 cup chopped tomato. Bring to a simmer and cook for 4–5 minutes until tomato softens. Add 1 teaspoon rasam powder, 1/8 tsp turmeric, and 3/4 tsp salt. If using, whisk in 1/4 cup cooked toor dal for body.

Simmer & adjust
Simmer the rasam for 3–4 minutes to blend flavors. Adjust salt and tamarind for desired tanginess — rasam should be a thin, tangy soup consistency suitable for dipping softened vadas.

Temper
Heat 1 tsp oil or ghee in a small skillet, add 1/2 tsp mustard seeds and 1/2 tsp cumin seeds. When mustard pops, add 1 dry red chili, 6 curry leaves and 1/8 tsp asafoetida. Pour this over the hot rasam and stir. Remove from heat.
Assembly & Serving

Place 2 freshly fried medhu vadas on a shallow serving bowl or plate.

Pour enough warm sambar or rasam into the bowl to partially submerge the vadas (about 1/2 to 3/4 cup per 2 vadas) so they soak and become soft and tender. Let them sit 2–3 minutes to absorb liquid. For a softer texture, pour more sambar/rasam and let sit up to 5 minutes.
