Vadai Dipped In Sambar/rasam (2pcs) Recipe

Vadai (Medhu Vada) batter and frying

    Soak

    Rinse 1 cup split urad dal thoroughly until water runs clear. Soak the dal in 1 cup water for 4–6 hours or overnight at room temperature.

    Grind batter

    Drain the soaked dal. In a wet grinder or high-speed blender, grind the dal with minimal water (use a few tablespoons as needed) to a smooth, fluffy, thick batter. Scrape down sides and stop before batter becomes runny. The final batter should be thick enough to hold shape.

    Whip

    Transfer batter to a bowl. Beat vigorously for 3–5 minutes (or use a spoon/spatula) to incorporate air — this gives soft, porous vadas. Add 1 tsp chopped green chili, 1/2 tsp grated ginger, 1 tbs chopped curry leaves, 1 tsp crushed soaked rice (optional for crispness), 3/4 tsp salt and 1/4 tsp crushed black pepper. Mix gently but thoroughly.

    Shape vadas

    Wet your hands. Take a golf-ball-sized portion of batter, flatten into a disc in palm, and make a hole in center (ring shape). Alternatively, use a wet spoon to drop rounded batter and press center with thumb to form the classic ring. Make 2 medium vadas.

    Fry

    Heat about 1 cup oil in a deep saucepan or kadai on medium heat until shimmering (approx. 175–185°C/350–365°F). Gently slide 1–2 vadas at a time into hot oil. Fry on medium heat, flipping, until golden brown and cooked through, about 3–4 minutes per side. Drain on paper towels. Repeat for remaining vada. Keep vadas warm.

Sambar (for soaking) - prepare if using sambar option

    Prepare sambar base

    If you have cooked toor dal, mash 1/2 cup until smooth. In a small saucepan combine mashed dal, 1/2 cup water, 1/2 tablespoon sambar powder, 1/2 tsp tamarind paste, 1/4 tsp turmeric and 1/2 tsp salt. Bring to a gentle simmer, adjust consistency so it is slightly thin (enough to soak vadas but not watery). Simmer 4–5 minutes so flavors meld.

    Temper sambar

    In a small tadka pan, heat 1 tsp oil. Add 1/4 tsp mustard seeds; when they pop add a pinch of hing and 4 curry leaves. Pour this tempering into the simmering sambar and stir. Keep warm.

    Adjust seasoning

    Taste and adjust salt or sambar powder. The sambar should be flavorful and slightly tangy so the vada soaks up taste.

Rasam (alternative for soaking) - prepare if using rasam option

    Combine rasam ingredients

    In a small saucepan, add 1/2 cup tamarind water (or diluted tamarind paste), 1/4 cup chopped/softened tomato, 1/2 tsp rasam powder, 1/8 tsp turmeric and 1/2 tsp salt. Add 1/2 cup water and bring to a gentle boil. Simmer 3–4 minutes to cook tomato and blend flavors.

    Temper rasam

    Heat 1 tsp oil in a small pan. Add 1/8 tsp mustard seeds; when they crackle add a pinch of hing and 3 curry leaves. Pour this tempering into the rasam and stir. Keep warm. Rasam should be thin and tangy, suitable for soaking vadas.

Assembling Vadai Dipped in Sambar/Rasam

    Soak vadas

    Choose either warm sambar or warm rasam. Place one fried vada on a shallow plate or bowl and pour enough warm sambar/rasam to just submerge and soak the vada (about 1/4 to 1/3 cup liquid per vada). Let it sit 1–2 minutes so the vada absorbs liquid and becomes soft but not disintegrated. Repeat for second vada.

    Top and serve

    Sprinkle each soaked vada with 2 tablespoons finely chopped red onion and 1 tablespoon grated fresh coconut (if using). Garnish with a teaspoon chopped coriander leaves. Serve immediately on a plate with a side of coconut chutney (about 2 tablespoons per serving). Provide a small bowl of extra sambar/rasam if guests prefer more gravy.

    Notes on texture & timing

    For softer, spongier vadas soak longer (3–4 minutes). For slightly crisp edges keep soak time under 2 minutes. Always use warm sambar/rasam and warm vadas for best absorption. All ingredients used in toppings should be fresh and finely chopped to complement the softened vada.

Coconut Chutney (quick)

    If preparing homemade coconut chutney: blend 1/4 cup fresh grated coconut with 1 small green chili, 1/2 tsp roasted chana dal (optional), 1/4 tsp salt and 2–3 tbsp water to a smooth paste. Temper with 1/2 tsp oil, mustard seeds and a pinch of hing with a couple of curry leaves and pour over chutney. Serve alongside soaked vadas.
