Vadai (Urad Dal Fritters)

    Soak dal

    Rinse 1 cup split urad dal under running water until water runs clear. Transfer to a bowl and cover with ~1 cup fresh water. Soak for 3–4 hours at room temperature until grains are plump and soft.

    Grind batter

    Drain the soaked dal completely. Transfer to a blender or wet grinder. Add 2–3 tablespoons of water only if needed and grind to a coarse to medium-fine batter — it should be thick and slightly grainy, not runny. Scrape into a bowl. Do not add too much water; batter should hold shape when scooped.

    Season batter

    To the batter add 0.5 tsp finely chopped green chilies (optional), 0.5 tsp grated ginger, 0.5 tsp cumin seeds, 1/8 tsp asafoetida, 0.75 tsp salt and 1 tsp sugar. Fold thoroughly to distribute seasonings. Taste a tiny pinch (optional) and adjust salt/sugar; batter should be mildly savory with a hint of sweetness.

    Shape & fry

    Heat 2 cups oil in a heavy frying pan or kadai over medium heat until it reaches 350°F (175°C) or a small piece of batter sizzles and rises slowly. Wet your hands slightly or use a spoon to take a tablespoon of batter, shape into a small disc or donut-like flattened ball (traditional vadai are round with a hole, but for Thair Vadai a flattened disc that soaks evenly works best). Gently slide into hot oil, frying 3–4 fritters at a time without overcrowding. Fry 3–4 minutes per side, turning once, until golden brown and crisp. Remove with a slotted spoon to paper towels to drain. Repeat until all batter is used. Allow fritters to cool for 10–15 minutes so they retain some crispness before soaking.

Yogurt Syrup & Soak

    Prepare sweetened yogurt

    In a mixing bowl whisk 2 cups plain whole-milk yogurt until smooth and slightly frothy. Add 1/4 cup water to loosen to a pourable but still fairly thick consistency. Stir in 1/2 cup powdered sugar until dissolved, 1/2 tsp cardamom powder, 1/4 tsp salt, and crushed saffron if using. Taste and adjust sweetness — it should be noticeably sweet but balanced by a touch of salt. Fold in 1 tsp rose water if using.

    Cool the mixture

    Chill the sweetened yogurt mixture in the fridge for 15–20 minutes if time allows — cool yogurt helps preserve texture of the vadai when soaking.

    Soak the vadai

    Arrange the drained, slightly cooled vadai in a shallow serving dish in a single layer. Pour the sweetened yogurt evenly over the fritters so each is well coated but not drowning — you want them lightly soaked so they absorb some yogurt while keeping some structure. Spoon extra yogurt over any dry spots. Cover and refrigerate 30–45 minutes to allow flavours to meld and vadai to soften slightly.

Finish & Garnish

    After soaking, gently turn the vadai once so both sides get yogurt exposure. Spoon remaining yogurt back over if any pooled underneath. Sprinkle 2 tablespoons slivered pistachios/almonds, 1/4 cup pomegranate arils, and 2 tablespoons toasted grated coconut evenly over the top. Scatter 1 tablespoon chopped fresh mint if using for freshness and color.

    Serve chilled or at cool-room temperature as a dessert or snack. Thair Vadai will keep covered in the refrigerator for up to 24 hours; the fritters will continue to soften over time.
