    Soak

    Rinse the parboiled rice twice until water runs clearer. Soak rice and poha together in enough water to cover for 4–6 hours. Rinse the urad dal and fenugreek seeds and soak them together in separate water for 4–6 hours.

    Grind batter

    Drain urad dal and fenugreek; reserve soaking water. Grind urad dal in a wet grinder or high-power blender with 150–200 ml of the reserved water to a smooth, fluffy batter (add water in small increments). Transfer to a large bowl. Drain rice/poha and grind with remaining reserved water (about 150 ml) to a slightly coarse but smooth batter. Combine rice and urad batters, mix thoroughly using a whisk or clean hand to incorporate air.

    Ferment

    Cover the bowl and keep it in a warm place to ferment for 8–12 hours or until doubled and slightly sour. In cooler climates, it may take longer.

    Prepare and steam mini idlies

    Once fermented, stir in 1 tsp salt. Grease mini idly molds or an idly tray with oil or ghee. Spoon batter into mini cavities, filling each three-quarters full. Bring about 1–2 cm of water to boil in an idly steamer or large pot with a trivet. Steam the mini idlies in batches for 8–10 minutes or until a toothpick inserted comes out clean. Remove and let sit 1 minute before demolding.

    Dry roast dals and seeds

    Heat a small heavy skillet over medium heat. Add chana dal and roast, stirring constantly, until golden brown and aromatic, about 3–4 minutes. Remove to a plate. In the same skillet dry-roast urad dal until light golden, about 2–3 minutes; remove. Roast sesame seeds separately until they pop and turn pale golden, about 2 minutes; remove and cool.

    Roast chilies, curry leaves and tamarind

    Add 1 tsp oil to the hot skillet. Reduce heat to medium-low. Add dry red chilies and fry for 30–45 seconds until they darken slightly (be careful not to burn). Add dried curry leaves and fry for 15–20 seconds until crisp. If using tamarind, quickly fry the small tamarind piece for 10–15 seconds to warm it; this helps release flavor. Remove everything to the plate to cool.

    Grind podi

    Once all roasted ingredients are room temperature, add them to a spice grinder or clean blender along with roasted dals, sesame seeds, asafoetida and 1/2 tsp salt. Pulse in short bursts to a coarse yet powdery texture — you want some grain for texture, not a fine flour. Taste and adjust salt or chili amount. Store in an airtight container at room temperature for up to 2–3 weeks or refrigerate for longer shelf life.

To Serve

    Warm ghee: Heat 2 tbs ghee in a small pan until just melted and fragrant. Optionally, you can temper a pinch of mustard seeds and a couple of curry leaves in the ghee for extra aroma.

    Assemble Spicy Podi Idly: Place a warm mini idly on a plate. Spoon about 1/2 to 3/4 tsp of spicy podi over the idly (adjust to taste). Drizzle a little warm ghee (about 1/4 tsp) over the podi so it adheres and the flavors bloom. For variation, you can mix podi with ghee in a small bowl (podi-ghee) and dip each idly into it.

    Serve: Arrange 3–4 mini idlies per person as an appetizer. Provide extra podi and ghee on the side. Spicy podi idly is best eaten immediately while idlies are warm and ghee is fragrant.
