Chickpea Base

    If using canned chickpeas, drain and rinse them thoroughly under cold water. Place chickpeas in a small saucepan with 1 cup water (optional), 1/2 tsp salt, 1/2 tsp ground cumin and 1/4 tsp ground coriander. Bring to a gentle simmer over medium heat and cook 5–8 minutes until warmed through and flavors meld. If chickpeas are already hot or you prefer a drier base, simply toss warm chickpeas with the spices in a bowl and set aside. Keep warm.

Samosas

    Reheat samosas so they are crisp and warm. For best texture, shallow-fry in 2 tbsp vegetable oil over medium heat 2–3 minutes per side until golden and crisp, or brush with a little oil and bake in a 400°F (200°C) oven for 8–10 minutes, turning once. If using fresh, hot samosas skip reheating. Let cool 1–2 minutes.

    Place each samosa on a cutting board and gently smash or break into large bite-sized pieces with the back of a spoon or the heel of your hand. Aim for a mix of chunks and crumbles so some crisp remains.

Yogurt Topping

    Whisk 1 cup plain yogurt with 1 tsp powdered sugar (or honey) and a pinch (1/8 tsp) salt until smooth. If the yogurt is very thick, whisk in up to 1 tbsp milk to reach a pourable but still creamy consistency. Taste and adjust sweetness/salt to balance the tamarind chutney.

Chutneys & Assembly Sauces

    If using bottled chutneys, give them a quick stir. Combine tamarind chutney and the green chutney in small serving bowls for easier drizzling. If you want extra heat, mix the red chili sauce into the green chutney to taste.

Final Assembly & Garnish

    Build each serving

    Divide the warm seasoned chickpeas between 4 shallow bowls or plates (about 1/2 cup chickpeas per serving).

    Top each chickpea portion with the smashed samosa pieces, distributing evenly (about 1–2 samosa pieces per serving depending on size).

    Generously spoon the sweetened yogurt over the samosa and chickpea layer so it drapes across the pieces (about 2–3 tbsp yogurt per serving).

    Drizzle tamarind chutney (about 1–1.5 tsp per serving) and green chutney (about 1 tsp per serving) over the yogurt in a decorative zigzag. Add a few drops of red chili sauce if desired.

    Scatter 1–2 tbsp sev (or crushed papdi) over each plate for crunch. Sprinkle the chopped onion, tomato, cilantro, and mint on top. Finish with a pinch each of roasted cumin powder, chaat masala and red chili powder to taste.

    Serve immediately with lemon wedges on the side for squeezing over. Encourage diners to mix layers together with a spoon so they get chickpea, samosa, chutney and yogurt in each bite.
