Tamarind base & stock

    Prepare tamarind extract

    Place the soaked tamarind pulp in a bowl with 1 cup hot water. Massage and break the pulp for 5 minutes, then strain through a sieve, pressing solids to extract thick tamarind juice. You should get about 3/4 to 1 cup thick extract. Add the remaining 1 cup water to adjust to 1 cup tamarind-water if needed.

    Combine the tamarind extract with the 2 cups vegetable stock (or water) in a saucepan and bring to a gentle simmer while you prepare other components.

Vegetables & aromatics

    Blanch and mash tomatoes: In a separate pan, add the chopped tomatoes and 2–3 tablespoons water. Cook on medium-low until tomatoes break down (6–8 minutes). Mash with the back of a spoon or lightly purée for a slightly smooth texture. If you prefer a fully smooth rasam, blitz with an immersion blender for 10–15 seconds.

    Add the crushed garlic and slit green chile to the mashed tomatoes and cook another 2 minutes to release aroma. Then add this tomato mixture to the simmering tamarind-stock.

Spices & seasoning

    Lightly roast cumin seeds in a small dry skillet over medium heat for 1 minute until aromatic, then crush or grind coarsely (use mortar & pestle or spice grinder).

    To the simmering tamarind-tomato stock, add turmeric powder, crushed roasted cumin, cracked black pepper, asafoetida, salt, and jaggery (if using). Stir and let the rasam simmer gently 6–8 minutes so flavors meld. Taste and adjust salt, pepper, or sweetness.

Tadka / finishing

    Prepare tadka (tempering): Heat ghee or oil in a small tadka pan or skillet over medium heat. When hot, add mustard seeds and wait until they begin to pop. Add the 1/2 tsp cumin seeds, dry red chile (broken if desired), and curry leaves. Fry for 15–20 seconds until aromatic and curry leaves crisp slightly. Turn heat off immediately to avoid burning.

    Pour the hot tadka into the simmering rasam. Cover pan immediately for 30 seconds to trap the aromas. Stir in chopped cilantro.

    Simmer the finished rasam another 1–2 minutes (do not boil vigorously) and remove from heat. Serve hot.
