Clean and score fish
Pat the pomfrets dry with paper towels. Make 3 shallow diagonal scores on each side of the fish so marinade can penetrate.

Rub the fish (inside cavity and both sides) with 1.5 tsp kosher salt and 1/2 tsp turmeric. Squeeze the juice of 1 lime over the fish. Let rest for 10 minutes while you prepare the podi.

After 10 minutes, wipe off excess moisture leaving the turmeric-salt-lime flavor. Spread 1 tablespoon ginger paste and 1 tablespoon garlic paste evenly on both sides and inside the cavity. Set fish aside to rest while podi is finished (15–20 minutes total).

Dry roast the ingredients on medium heat in a skillet: start with 1 tablespoon rice and 1 tablespoon urad dal and 1 tablespoon chana dal. Stir constantly until the dal and rice turn light golden (about 2–3 minutes). Transfer to a plate.

In the same skillet add 6 dried red chilies (deseeded if you want milder heat), 1 tablespoon coriander seeds, 1/2 tsp fenugreek seeds, 1/2 tsp black peppercorns and roast on low–medium heat until the chilies darken slightly and become aromatic (2–3 minutes). Keep stirring to avoid burning.

Add 10 fresh curry leaves to the skillet and roast for 30–45 seconds until crisp. Combine these with the previously roasted rice and dals. Remove from heat and cool completely (5–8 minutes).

Once cool, grind the roasted mix with 3/4 tsp salt in a spice grinder to a coarse powder (podi). Transfer to a bowl and mix in 1 teaspoon cold-pressed coconut oil; this helps the powder cling to the fish and keeps it aromatic. Taste and adjust salt if needed.

Heat a grill pan or cast-iron skillet over medium–high heat. Brush both sides of the fish lightly with 1 tablespoon coconut oil so the podi sticks. Sprinkle and press about 1.5–2 tablespoons of the prepared podi onto each fish side and into the scored cuts and cavity, pressing gently so the powder adheres.

Add 1 tablespoon coconut oil to the hot pan and reduce heat to medium. When oil shimmers, place the fish gently on the pan, skin-side down if one side has skin. Cook without moving for 4–5 minutes until the underside is golden and the edges start to crisp.

Carefully flip the fish using a wide spatula. If using mustard seeds for a tempering-style aroma, heat 1/2 tsp mustard seeds in a small teaspoon of oil until they pop, then quickly drizzle over the flipped fish before closing to continue cooking. Cook the second side for 3–5 minutes more depending on thickness—pomfret reaches done when the flesh flakes easily and registers about 57–60°C (135–140°F) near the bone.

During the last minute, baste the fish with the remaining tablespoon of coconut oil mixed with a pinch of podi for extra gloss and flavor. Remove from pan and let rest on a plate for 2 minutes.
