Method
Prepare spice paste and amla

dry roast and grind spices
Heat a small skillet over medium heat. Add black peppercorns (2 tsp) and cumin seeds (1 tsp). Dry-roast, stirring, until fragrant and slightly darker, about 1–2 minutes. Remove to a plate and let cool. Grind the roasted pepper and cumin with peeled garlic cloves (4) in a small spice grinder or mortar and pestle to a coarse paste. Add turmeric (1/4 tsp) while grinding. Set aside.

If using fresh amla: remove seeds and roughly crush the flesh (use a mortar or chop finely) to measure 1/4 cup. If using frozen crushed amla, thaw. Keep aside.
Make rasam base

In a medium saucepan, add chopped tomato (1 cup) and 3 cups water. Bring to a gentle boil over medium heat, then reduce to a simmer for 6–8 minutes until tomatoes soften and begin to break down.

Add tamarind paste (2 tbs) to the simmering tomato water and stir to dissolve. If using tamarind pulp, add dissolved tamarind water and discard fibers. Add salt (1 tsp) and simmer 4 minutes.

Add crushed amla (1/4 cup) and simmer 2–3 minutes to heat through but preserve some fresh astringency. Taste and adjust salt or tamarind as needed.
Temper and finish

In a small frying pan, heat ghee or oil (1 tbs) over medium heat. When hot, add mustard seeds (1/2 tsp). When they crackle, add cumin seeds (1/2 tsp), broken dry red chili (1), and curry leaves (8). Fry for 10–15 seconds until fragrant.

Turn heat to low and add asafoetida (1/8 tsp) to the tempering. Immediately pour the hot tempering into the simmering rasam pot. Stir once and remove from heat.

Let the rasam rest for 2 minutes for flavors to marry. Taste and adjust seasoning. If desired, garnish with chopped coriander (2 tbsp) and serve with lime wedges.
To serve

Serve hot as a thin soup alongside plain steamed rice or as a restorative broth. Keep reserved extra crushed amla to add a spoonful to individual bowls if you want a fresher tang.
