    Rinse the country chicken pieces under cold water and pat dry. Place the chicken in a large stockpot.

    Add 3 liters of water to the pot along with 1 tsp turmeric powder and 2 tsp salt. This will form the base of the broth.

    Bring the pot to a gentle boil over high heat. Once boiling, reduce heat to maintain a low simmer and skim off any foam or scum that rises to the surface for a clearer broth (about 8–10 minutes of initial simmering).

    Partially cover the pot and simmer gently for 45–60 minutes, or until the country chicken is tender and the flavors have developed. Country chicken can take longer than broiler chicken; test a thicker piece near the bone for doneness.

Aromatics & Spice

    While the broth simmers, slightly crush the peppercorns and cardamom pods to release oils. Keep the cinnamon stick, crushed peppercorns, and cardamom ready.

    In the last 20–25 minutes of simmering, add the sliced fresh turmeric (or extra ground turmeric), crushed peppercorns, crushed cardamom, cinnamon stick, julienned ginger, crushed garlic cloves, halved onion, and fresh curry leaves to the pot. These are added later to preserve their bright aromatics.

    Continue simmering for the remaining time so the aromatics infuse the broth without becoming overly bitter (about 20–25 minutes). Taste the broth and adjust salt if necessary.

Finishing & Garnish

    When the chicken is fully cooked and the flavors are balanced, turn off the heat. Remove the larger solids you prefer not to serve whole (cinnamon stick, cardamom pods, onion halves) or leave them for presentation as desired.

    Squeeze the juice of 1 lime or lemon into the pot to brighten the soup; stir gently.

    Ladle the soup into bowls, making sure each bowl gets both broth and tender chicken pieces. Sprinkle chopped fresh coriander and a pinch (about 1/2 tsp) of freshly ground black pepper over each serving.

    If desired, finish each bowl with a small drizzle (about 1 tsp) of coconut oil or ghee for added richness and aroma.

    Serve hot with steamed rice, crusty bread, or as a restorative broth on its own.
