    Clean and marinate the chicken

    Rinse the country chicken pieces and pat dry. In a large bowl combine lime juice, turmeric powder, 1.5 tsp salt, ginger paste and garlic paste. Add the chicken pieces and mix thoroughly so the marinade coats each piece. Cover and refrigerate for at least 1 hour, preferably 3–4 hours or overnight for best flavor.

Prepare spice mix

    Dry roast whole spices

    In a small skillet over medium heat, dry-roast coriander seeds, cumin seeds, black peppercorns, fennel seeds and dry red chilies for 2–3 minutes until fragrant and slightly darker. Shake the pan frequently to prevent burning. Remove and cool slightly.

    Grind spices

    Transfer the roasted spices to a spice grinder or mortar and pestle. Add the roasted gram dhal (or peanut powder) and dried curry leaves. Grind to a coarse-fine powder. Set aside about 2 tablespoons of this powder for finishing the roast if you like an extra crusty coating.

Sauté aromatics & form base

    In a heavy-bottomed skillet or kadai, heat 4 tablespoons coconut oil over medium heat. Add the sliced onions and sauté, stirring occasionally, until they caramelize to a deep golden brown — about 15–20 minutes. Lower heat if onions brown too quickly. This step builds the base flavor for the roast.

    Add the chopped tomato and slit green chilies to the caramelized onions. Cook for 5–7 minutes until the tomato breaks down and the mixture smells aromatic.

    Stir in fresh curry leaves and half of the ground spice mix (reserve the rest). Cook together for 1–2 minutes to bloom the spices.

Brown and cook chicken

    Push the onion-tomato mixture to one side of the pan (or remove briefly). Add remaining 2 tablespoons coconut oil to the empty space and raise heat to medium-high. Add marinated chicken pieces in a single layer (work in batches if necessary). Sear the chicken pieces on all sides until well browned, about 3–4 minutes per side. Browning helps develop a deep roast flavor.

    Once browned, mix the chicken with the onion-tomato-spice base. Sprinkle the reserved ground spice powder over the chicken, then reduce heat to medium-low. Cover and cook for 15 minutes, stirring occasionally and spooning the sauce over the pieces to keep them moist. If the pan becomes too dry, add 2–3 tablespoons water.

    After 15 minutes, remove the lid and continue to cook on medium heat to evaporate excess moisture and allow the chicken to roast in the oil and spices. Stir frequently and press pieces gently with a spatula so more surface area browns. Cook another 10–15 minutes until chicken is cooked through (internal temperature 75°C / 165°F for small pieces; country chicken may require slightly longer) and a dark crust has formed.

Finish & garnish

    Taste and adjust salt (use the additional 1/2 tsp salt if needed) and add freshly crushed black pepper. If using, stir in 1 tablespoon ghee for a glossy finish and richer aroma.

    Sprinkle chopped fresh coriander and the reserved 2 tablespoons powdered spice for texture and aroma. Toss well so the garnish coats the pieces.

    Transfer the roast to a serving platter and serve hot with lime wedges on the side. Nattukozhi Ney Roast pairs well with steamed rice, appam, dosas or parotta.
