Vadai batter

Method

Prepare and soak

    Rinse the urad dal under running water until the water runs almost clear. Transfer to a bowl and cover with about 1 cup of water. Soak for 4–6 hours at room temperature (or overnight in the refrigerator).

Grind batter

    Drain and reserve

    After soaking, drain the dal thoroughly using a fine mesh strainer. Reserve any soaking liquid if desired but discard excess; the dal should be nearly dry before grinding.

    Grind to a fluffy batter

    In a heavy-duty wet grinder or high-speed blender, add the soaked dal in 2–3 batches with about 2–3 tablespoons (part of the 1/4 cup cold water) of cold water as needed. Grind to a smooth, fluffy, and slightly grainy paste (not completely watery). Scrape down the sides as needed. Total grinding time 6–10 minutes depending on equipment. The batter should be light, airy and able to form a soft peak when lifted.

    Transfer the batter to a large mixing bowl. Add 1 tsp salt and 1/8 tsp asafoetida (hing). Beat the batter vigorously with the back of a spoon or whisk for 2–3 minutes to incorporate air. The batter should be thick but spoonable — if too thick, add up to 1–2 tsp cold water, a little at a time.

Mix-ins and rest

    Fold in the chopped onion (1/4 cup), chopped green chilies (1 tbsp), grated ginger (1/2 tsp), chopped curry leaves (1 tbsp) and crushed pepper (1/2 tsp) evenly into the batter. Cover and allow the batter to rest for 15–20 minutes at room temperature. This helps the flavors marry and the batter to firm up slightly for shaping.

Shape the vadai

    Heat 2 cups of vegetable oil in a wide, heavy-bottomed pan or kadai over medium heat. To test readiness, drop a small pinch of batter into the oil — it should sizzle and come up slowly. Maintain oil temperature at a medium sizzle (about 325–350°F / 160–175°C).

    Wet your palms with a little water (keep the 1/4 cup handy). Take approximately 1/3 cup of batter for each vadai (this recipe makes three medium-large vadais). If desired, dust your palm lightly with 1 tsp rice flour to prevent sticking. Flatten the batter between your palms into a 2.5–3 inch disc about 1/4–1/3 inch thick, then press a thumb in the center to make the characteristic hole (or leave whole if you prefer). Keep shaped vadais on a plate while you fry.

Fry the vadai

    Gently slide 2–3 vadais into the hot oil without overcrowding. Maintain medium heat so the exterior cooks evenly to a deep golden brown while the inside cooks through. Fry for about 3–4 minutes on the first side; flip and continue frying for another 3–4 minutes, adjusting heat if they brown too quickly. Total frying time about 6–9 minutes per batch depending on size and oil temperature.

    Use a slotted spoon to remove the vadais and drain on paper towels or a wire rack. If oil temperature drops too much between batches, raise heat slightly; if vadais are browning too fast and remaining raw inside, lower the heat.

Serve

    Let the medhu vadais rest 2 minutes to drain excess oil. Serve hot or warm with coconut chutney and sambar or with a spicy tomato/onion chutney. They are best eaten the same day for crisp exterior and soft interior.
