    Soak dal

    Rinse the split urad dal thoroughly under cold water until water runs clear. Transfer to a bowl and cover with 3 cups of water. Soak for 4–6 hours at room temperature or overnight in the refrigerator.

    Grind dal

    Drain the soaked dal completely. In a wet grinder or high-speed blender, grind the dal with minimal water (start with 2–3 tbsp) to a thick, smooth, and fluffy batter. Stop occasionally to scrape sides. Total grinding time ~8–12 minutes in a wet grinder; less if using a powerful blender. The batter should be light, airy, and hold shape.

    Season batter

    Transfer batter to a bowl. Add 1 1/4 tsp salt and, if using, 1/4 tsp baking soda. Whip the batter by folding with a spatula for 1–2 minutes to incorporate air and slightly loosen the texture. Do not add more water.

Flavorings & mix-ins

    Lightly crush 1 tsp black peppercorns with a mortar and pestle (or pulse briefly) and mix with 1 tsp cumin seeds into the batter.

    Fold in 1/2 cup finely chopped onion, 1 tsp grated ginger, 2 finely chopped green chilies, ~10 curry leaves shredded, and 2 tbsp chopped cilantro (if using). Mix thoroughly so the pieces are evenly distributed but maintain batter aeration.

    Taste a tiny pinch (optional): lightly fry a small spoonful in a pan to check seasoning; adjust salt or chilies if needed.

Frying and finishing

    Heat oil in a deep, heavy-bottomed pan or kadai over medium heat. The oil should reach ~350°F (175°C) — test by dropping a small bit of batter: it should sizzle and come up slowly, browning in ~40–50 seconds.

    Wet your hand slightly or oil it to prevent sticking. Take a lemon-sized portion of batter (about 2 tbsp), flatten it slightly between the palms to form a small disk with a slight depression in the center (medhu vadai traditionally has a hole but a small depression works). Alternatively, you can use the back of a spoon to shape on a slotted spatula and slide into oil.

    Carefully slide 4–5 vadai into the hot oil, do not overcrowd. Fry on medium heat, turning occasionally, so they cook through and achieve an even golden-brown color. Total frying time about 4–6 minutes per batch depending on size and oil temperature.

    Once golden and crisp, remove vadai with a slotted spoon and drain on paper towels or a rack. Keep warm in a low oven (about 200°F / 95°C) if frying multiple batches.

    Repeat shaping and frying with remaining batter. Adjust heat between batches to maintain oil temperature.

    Serve hot or warm with coconut chutney and sambar, or with a cup of South Indian filter coffee.
