Marinade

    Rinse shrimp, pat dry and place in a bowl. Add turmeric, salt and lime juice. Mix gently to coat and set aside for 10–15 minutes while you prepare the masala paste.

Masala paste

    Dry-roast coriander seeds, cumin seeds, fenugreek seeds, black peppercorns and dry red chilies in a small pan over medium heat for 1–2 minutes until aromatic. Be careful not to burn them.

    Allow the roasted spices to cool slightly, then transfer to a blender with shallots, garlic, tamarind paste and 3 tbs water. Grind to a smooth, slightly coarse paste. Add a little more water if needed to blend. Set aside.

Curry base & finishing

    Heat coconut oil in a wide skillet or kadai over medium heat. When hot, add mustard seeds and let them pop.

    Add curry leaves and slit green chilies. Sauté for 15–20 seconds until fragrant.

    Add the thinly sliced onion and a pinch of salt. Sauté on medium-high heat until onions turn translucent and begin to brown at the edges, about 6–8 minutes.

    Stir in the chopped tomatoes and cook until they soften and release juices, about 4–5 minutes.

    Add the prepared masala paste to the pan and mix well into the onion-tomato mixture. Fry the paste for 3–4 minutes, stirring often, until the raw smell of shallots/garlic and spices reduces and the oil begins to separate slightly.

    Add red chili powder, coriander powder and the listed 1 tsp salt. Stir to combine.

    Pour in 100 ml water, bring to a gentle simmer, and adjust consistency to a thick gravy — the mixture should coat the back of a spoon. Simmer for 3 minutes to meld flavors.

    Add the marinated shrimp in a single layer, stirring gently to coat with the thokku. Cook uncovered on medium heat for 4–6 minutes, stirring once or twice, until shrimp are opaque, pink and cooked through. Do not overcook — shrimp should be just firm.

    Taste and adjust seasoning (salt or lime) if needed. If you prefer a tangier finish, add an additional 1 tsp tamarind paste or a squeeze of lime.

    Turn off heat and sprinkle chopped cilantro (optional). Let the dish rest for 2 minutes before serving so flavors settle.

    Serve warm as an appetizer (Kari Thodakkam) — spoon onto small plates or toothpick-skewered for bite-sized portions. Also pairs well with steamed rice or appam if served as a small course.
