Crack the eggs into a medium bowl. Add the milk, 1/2 tsp salt and 1/2 tsp black pepper. Whisk vigorously until the mixture is uniform in color and slightly frothy (about 20–30 seconds). This makes a tender omelette.

Sauté aromatics and vegetables
Heat a nonstick 8-10 inch skillet over medium heat. Add 1 tablespoon butter. When butter foams, add the diced shallot/onion and sauté 1–2 minutes until softened. Add bell pepper and mushrooms and sauté 2–3 minutes until vegetables are tender and any released liquid has evaporated. Season lightly with the remaining 1/2 tsp salt and a pinch of pepper. Transfer cooked vegetables to a plate and wipe the pan with a paper towel if excess moisture remains.

If using fillings, spread the sautéed vegetables evenly over one half of the omelette, sprinkle the grated cheddar and chopped herbs on top of the vegetables.

Carefully fold the empty half of the omelette over the filled half using the spatula to form a half-moon. Let cook 20–30 seconds more to warm the filling and melt the cheese. If you prefer the interior fully set, cover the pan briefly for 10–20 seconds.

Slide the omelette onto a plate seam-side down. Garnish with the remaining fresh herbs and an extra grind of black pepper. Taste and adjust salt if needed.

Serve immediately with toast, salad, or roasted potatoes. Leftovers can be refrigerated in an airtight container for up to 24 hours but are best fresh.
