Bonda batter

    In a mixing bowl, combine gram (besan) flour, rice flour, turmeric, red chili powder, garam masala, salt and baking soda. Whisk to distribute the spices evenly.

    Add 2–3 tablespoons water gradually and whisk to form a thick, lump-free batter that coats the back of a spoon. Batter should be thicker than pancake batter — spoonable but not runny. Adjust with the remaining tablespoon of water if needed.

    Cover the batter and let it rest for 5–10 minutes while you prepare the filling. Resting hydrates the flour and improves texture.

Tempering & potato filling

    If using the tempering, heat 2 tablespoons oil in a small pan over medium heat. Add mustard seeds; when they start to pop, add cumin seeds and sauté 5–10 seconds until aromatic.

    Add chopped green chilies and grated ginger; sauté 15–20 seconds. Turn off heat and stir in chopped cilantro.

    Place the boiled, peeled and mashed potato in a bowl. Add the tempering mixture, amchur powder (or lemon juice), and mix thoroughly. Adjust salt to taste. The mixture should be slightly dry and moldable; if too wet, cook briefly in a pan to remove moisture.

    Divide the potato mixture into 4 equal portions and shape each into a flattened disc large enough to wrap a boiled egg.

Assembling egg bondas

    Peel the hard-boiled eggs and pat dry with paper towel. If desired, make a slight slit lengthwise in each egg to help potato adhere (optional).

    Take one potato disc, place a peeled egg in the center, and carefully wrap the potato around the egg, sealing seams so the egg is completely encased. Repeat for all 4 eggs.

    Heat neutral frying oil in a deep skillet or saucepan to 170–175°C (340–350°F). If you don't have a thermometer, test by dropping a small bit of batter — it should sizzle and rise steadily without browning immediately.

Coating & frying

    Stir the rested besan batter. If it has thickened too much, thin slightly with a teaspoon or two of water to reach a thick coating consistency.

    Hold each potato-wrapped egg by one end (or use a fork), dip completely into the besan batter, ensuring an even coating. Allow excess batter to drip off for 5–10 seconds.

    Gently slide coated bondas into the hot oil, placing them seam-side up first. Fry in batches of 2 to avoid crowding. Fry for about 4–6 minutes, turning occasionally so they brown evenly to a deep golden-brown and the batter is cooked through.

    Use a slotted spoon to remove bondas and transfer to a plate lined with paper towels to drain excess oil. Keep warm and repeat with remaining bondas.

Finishing & serving

    Optionally, drizzle a little oil over bondas or briefly reheat in a 180°C (350°F) oven for 3–4 minutes to crisp up before serving.

    Serve hot as 4 individual pieces with green chutney, tamarind-date chutney or ketchup, and lemon wedges.
