Mix dry ingredients
In a mixing bowl, combine 1 1/4 cups all-purpose flour and 1/2 tsp salt. Whisk briefly to distribute.

Incorporate fats
Add 2 tbs oil and 1 tbs ghee (or melted butter) to the flour. Rub with fingertips until the mixture resembles coarse crumbs (pea-size granules).

Form dough
Gradually add about 1/3 cup cold water, a tablespoon at a time, and bring the dough together. Knead gently for 2–3 minutes until smooth but firm. Do not over-hydrate; dough should be slightly stiff so samosas stay crisp.

Rest dough
Cover the dough with a damp cloth or plastic wrap and rest at room temperature for 20–30 minutes.

Add aromatics
Add 1 tsp grated ginger and 1 chopped green chili; cook 1 minute until fragrant.

Spice the mixture
Stir in 1/4 tsp turmeric, 1/4 tsp red chili powder, 1/2 tsp garam masala and 3/4 tsp salt. Cook spices with onions for 30 seconds to bloom.

Combine potato & peas
Add 1 cup mashed potato and 1/4 cup peas to the skillet. Mix thoroughly and cook 2–3 minutes to heat through, gently breaking any large potato lumps. If mixture seems dry, add 1–2 tsp water.

Finish filling
Remove from heat. Stir in 2 tbs chopped cilantro and 1/2 tsp amchur (or lemon juice). Taste and adjust salt or amchur. Let the filling cool to warm (not hot) before stuffing the dough.
Assembling & frying (makes 3 medium samosas)

Divide & roll
Divide rested dough into 3 equal portions. Roll each portion into a smooth ball, then flatten slightly and roll into a thin oval about 7–8 inches long and 5 inches wide, dusting lightly with flour to avoid sticking.

Create cone
Take one oval and cut it in half lengthwise to form two semi-ovals. Take one semi-oval with the straight edge facing you; brush a thin line of flour slurry (1 tsp flour mixed with 1 tsp water) along the edge. Fold the semi-oval into a cone by bringing the straight edges together, overlapping to seal and pressing to form a cone with an open top.

Stuff cone
Fill the cone with about 1/3 cup of the cooled filling, leaving room at the top. Do not overfill. Brush the open edges of the cone with a little slurry and pinch or fold the dough to seal completely, ensuring there are no gaps.

Finish remaining samosas
Repeat the cone, stuffing and sealing process for the other two portions. Trim any excess dough for neat edges if needed.

Heat oil
Pour about 3/4 cup oil into a medium skillet (enough for shallow frying) and heat over medium heat until shimmering. To test, drop a small piece of scrap dough — it should sizzle and rise slowly without browning instantly.

Fry samosas
Gently slide 1 or 2 samosas into the hot oil (do not overcrowd). Fry, turning occasionally, keeping the oil at medium to medium-low so the samosa cooks through: about 4–6 minutes total until evenly golden-brown and crisp. Adjust heat as needed to avoid burning while ensuring interior is cooked.

Drain & rest
Use a slotted spoon to transfer fried samosas to a paper towel–lined plate to drain excess oil. Let rest 2–3 minutes so interior steams settle and crust crisps fully.
