Method
For the potato filling

Boil the diced potatoes in salted water until tender, about 10–12 minutes. Drain thoroughly and mash coarsely; set aside to cool slightly.

Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add mustard seeds and let them splutter (about 30 seconds). Add cumin seeds and sauté 10–15 seconds until fragrant.

Add chopped green chilies and grated ginger; sauté 20–30 seconds until raw aroma dissipates.

Stir in turmeric, coriander powder and garam masala; cook 10 seconds to bloom the spices.

Add the mashed potatoes to the pan, sprinkle salt, and mix thoroughly. Cook 2–3 minutes, mashing any large lumps and ensuring spices are well incorporated. Remove from heat and stir in lemon juice and chopped cilantro. Taste and adjust salt. Let the filling cool until it can be handled (10 minutes).

Divide the filling into three equal portions and roll each into a smooth ball (about golf-ball size).
For the chickpea (besan) batter

In a mixing bowl, combine besan, rice flour, red chili powder, turmeric, asafoetida (if using), and salt. Whisk to blend dry ingredients evenly.

Gradually add 3/4 cup water while whisking to create a thick, lump-free batter that coats the back of a spoon. Adjust with an extra tablespoon of water if too thick. The batter should be thicker than pancake batter—sufficient to form an even coating over the potato balls.

Break baking soda into the batter and gently fold just before frying to give lightness. Do not overmix.
For assembly and frying

Heat 1.5–2 cups oil in a heavy-bottomed deep pan or kadai to 175–180°C (350–360°F). If you do not have a thermometer, drop a small bit of batter in oil; it should sizzle and rise steadily without browning immediately.

Using lightly oiled hands, take each cooled potato ball and shape/flatten slightly to a smooth round. If desired, press a small cavity in the center and re-close so the ball is smooth; this helps batter adhere.

Dip each potato ball into the besan batter, ensuring an even, full coating. Gently tap off any excess batter and lower the coated ball into the hot oil using a slotted spoon.

Fry 2–3 bondas at a time (do not overcrowd) for 4–6 minutes, turning occasionally, until batter is golden brown and crisp. Maintain oil temperature; reduce heat slightly if browning too fast.

Use a slotted spoon to remove the bondas and drain on a wire rack or paper towels for 1–2 minutes to remove excess oil.

Repeat with remaining potato balls and batter. If batter thickens while frying, whisk in 1 tablespoon water to restore consistency. If using baking soda, add it to each small batch right before frying for best lift.
