    Prepare and blanch

    Rinse goat legs thoroughly under cold water. In a large pot, add the goat legs and enough water to cover (about 2.5 liters). Bring to a rapid simmer over high heat and let simmer for 5 minutes to release impurities. Skim off any foam that rises, then drain the meat and discard the blanching water. Rinse the pot.

    Simmer the broth

    Return the blanched goat legs to the clean pot and add 2.5 liters fresh water. Add grated turmeric (or ground turmeric), whole black peppercorns, and salt. Bring to a boil, then reduce heat to maintain a gentle simmer. Partially cover and simmer for 1.5 to 2 hours, until the meat is tender and beginning to pull from the bone. Skim occasionally to keep the broth clear.

Aromatics & Vegetables

    Prepare aromatics

    While the broth is simmering, heat 2 tablespoons oil or ghee in a small skillet over medium heat. Add mustard seeds and wait until they begin to pop (about 30–45 seconds). Add cumin seeds and optional fenugreek seeds, stirring for 15–20 seconds until fragrant. Add smashed garlic, sliced ginger, and slit green chiles; sauté briefly until garlic is lightly golden, about 1–2 minutes. Add curry leaves and stir for another 20 seconds — be careful, curry leaves will sizzle.

    Add vegetables

    Add the chopped tomato and quartered onion to the skillet and cook until the tomato breaks down and onion is translucent, about 4–6 minutes. Transfer this aromatic mixture into the simmering broth about 30–40 minutes before the end of cooking to deepen flavor. Continue simmering until the meat is fully tender.

    Adjust seasoning

    When the goat legs are tender, remove the meat pieces onto a cutting board. If desired, remove meat from bones, roughly shred or cut into large chunks and return to the pot. Taste the broth and adjust salt and pepper. Add freshly ground black pepper for brightness and the tablespoon of lime or lemon juice to balance richness.

    Garnish and serve

    Stir in chopped cilantro just before serving. Ladle the hot Aatukaal Soup into bowls, making sure each serving gets a piece of goat leg and a generous spoonful of broth and aromatics. Serve with steamed rice, flatbread, or on its own.
