    Prepare the Slaw

    In a bowl, combine the coleslaw mix and coleslaw dressing. Toss well to ensure the cabbage and carrots are evenly coated. Set aside in the refrigerator to chill while you prepare the pastrami.

    Smoke the Pastrami

    Preheat your smoker to 225°F (107°C). Place the pastrami in the smoker and smoke for about 3-4 hours, or until the internal temperature reaches 165°F (74°C).

    Melt the Cheese

    Once the pastrami is smoked, remove it from the smoker and place it on a baking sheet. Cover the pastrami with mozzarella and provolone cheese. Broil in the oven for about 2-3 minutes, or until the cheese is melted and bubbly.

    Assemble the Sandwich

    On two slices of marble rye, layer the smoked pastrami with melted cheese. Top with pickled red onions and a generous drizzle of apple aioli. Place the other two slices of rye on top to complete the sandwich.
