    Prepare the Brisket

    In a bowl, mix salt, black pepper, paprika, garlic powder, onion powder, and brown sugar. Rub this mixture all over the brisket. Let the brisket sit at room temperature for about 30 minutes.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and smoke for about 1.5 hours per pound, or until it reaches an internal temperature of 195°F (90°C).

    Make the Slaw

    In a large bowl, mix coleslaw mix, mayonnaise, apple cider vinegar, sugar, and salt. Toss until well combined and refrigerate until serving.

    Prepare the Rolls

    In a skillet, melt butter over medium heat. Toast the sweet rolls in the melted butter until golden brown.

    Assemble the Sandwiches

    Slice the smoked brisket against the grain. Place a generous amount of brisket on each toasted roll, top with coleslaw and drizzle with BBQ sauce before serving.
