    Cook Quinoa

    Rinse quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the water is absorbed. Fluff with a fork and set aside.

    Prepare Salmon

    Season salmon fillets with salt and pepper. Heat a skillet over medium-high heat and add a tablespoon of oil. Cook the salmon for about 4-5 minutes on each side or until cooked through. Remove from heat and flake into bite-sized pieces.

    Prep Vegetables

    Chop romaine lettuce, dice tomato, and cucumber. Finely chop the red onion.

    Assemble the Bowl

    In a large bowl, combine cooked quinoa, romaine, tomato, cucumber, edamame, corn, and red onion. Top with flaked salmon and drizzle with green goddess dressing. Garnish with crispy leeks.
