Marinate the Chicken

In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs and ensure they are well coated. Cover and refrigerate for at least 2 hours or overnight.

Prepare the Slaw

In a separate bowl, mix the shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, and chili powder. Stir until well combined and set aside.

Bread and Fry the Chicken

In another bowl, mix the flour, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper. Remove the chicken from the marinade, allowing excess to drip off, then dredge each piece in the flour mixture. Heat oil in a skillet over medium-high heat and fry the chicken until golden brown and cooked through, about 5-7 minutes per side.

Assemble the Sandwich

To assemble, spread a generous amount of chili slaw on the bottom half of each brioche bun. Top with fried chicken, pickles, and the top half of the bun.
