Cook the Farro
In a medium saucepan, combine 1 cup of farro with 3 cups of water. Bring to a boil, then reduce heat and simmer for 25-30 minutes until tender. Drain excess water and set aside.

Roast the Vegetables
Preheat your oven to 425°F (220°C). On a large baking sheet, toss the chopped cauliflower, diced poblano, sliced maitake mushrooms, and diced sweet potato with olive oil, salt, and pepper. Spread in a single layer and roast for 25-30 minutes until vegetables are tender and slightly caramelized.

Prepare the Cilantro Lime Aioli
In a small bowl, mix together 1/2 cup of mayonnaise, the juice of 1 lime, 1/4 cup of chopped cilantro, and salt to taste. Stir until smooth and well combined.

Assemble the Bowl
In serving bowls, layer the cooked farro, roasted vegetables, sliced avocado, and crumbled cotija cheese. Drizzle with cilantro lime aioli and top with additional cilantro if desired.
