Cheesecake Preparation
- 1
Prepare the crust
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 10 minutes, then remove and cool.
- 2
Make the cheesecake filling
In a large mixing bowl, beat together cream cheese and sugar until smooth. Add in eggs one at a time, mixing well after each addition. Finally, mix in sour cream, vanilla extract, and passion fruit puree. Pour the filling over the cooled crust.
- 3
Bake the cheesecake
Bake the cheesecake in the preheated oven at 325°F (160°C) for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
- 4
Chill the cheesecake
Remove the cheesecake from the oven, then refrigerate for at least 4 hours or overnight until fully set.
- 5
- 6
Make the mango glaze
In a small saucepan, combine mango puree, sugar, and lemon juice. Heat over medium until warmed through. Mix cornstarch with a little water to create a slurry, then add to the saucepan and stir until thickened. Remove from heat and let cool.
- 7
Assemble the cheesecake
Once the cheesecake is set, spread the passion fruit curd evenly over the top. Then, drizzle the mango glaze over the curd, creating a marbled effect if desired.
- 8
Serve
Slice the cheesecake and serve chilled, garnishing with additional passion fruit pulp if desired.
