    Prepare the Potatoes

    Preheat your oven to 375°F (190°C). Peel and thinly slice the Russet potatoes.

    Mix the Cream and Cheese

    In a mixing bowl, combine the Heavy cream, Truffle Boursin cheese, salt, and black pepper. Whisk until smooth.

    Layer the Gratin

    In a greased baking dish, layer half of the sliced potatoes. Pour half of the cream mixture over the potatoes. Sprinkle half of the cooked bacon. Repeat the layers with the remaining potatoes, cream mixture, and bacon.

    Add Demi-Glace and Bake

    Drizzle the A.1 demi-glace over the top layer. Dot with butter. Cover the baking dish with aluminum foil and bake for 45 minutes.

    Finish Baking

    Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.

    Garnish and Serve

    Remove from the oven, let it cool for a few minutes, then sprinkle with fresh chives before serving.
