    Prepare the Cauliflower

    Remove the leaves from the cauliflower and slice it into 1-inch thick steaks. Brush both sides with olive oil and season with salt and pepper.

    Grill the Cauliflower

    Preheat the grill to medium-high heat. Grill the cauliflower steaks for about 5-7 minutes on each side, or until they are tender and have grill marks. In the last few minutes of grilling, brush the steaks with miso paste.

    Make the Carrot Puree

    While the cauliflower is grilling, peel and chop the carrots. Boil them in salted water until tender, about 15 minutes. Drain and blend with a little olive oil and salt until smooth.

    Cook the Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed. Fluff with a fork.

    Sauté Maitake Mushrooms

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the maitake mushrooms and sauté until golden and tender, about 5-7 minutes. Season with salt and pepper.

    Assemble the Dish

    On a plate, spread a layer of carrot puree, top with the grilled cauliflower steak, add sautéed maitake mushrooms, and a scoop of quinoa. Garnish with pomegranate seeds and serve with salsa verde on the side.
