Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half lengthwise.

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside. Reserve the bacon drippings in the skillet.

Fry the Brussels Sprouts
Increase the heat to medium-high and add the halved Brussels sprouts to the skillet with the bacon drippings. Fry until they are golden brown and crispy, about 8-10 minutes, stirring occasionally. Season with salt and black pepper to taste.

Make the Vinaigrette
In a small bowl, whisk together the Dijon mustard, apple cider vinegar, olive oil, and honey until well combined.

Combine and Serve
In a large bowl, toss the fried Brussels sprouts with the bacon, pickled onions, sliced Fresno chili, and peanuts. Drizzle with the mustard vinaigrette and toss to coat. Serve warm.
