    Prepare the Chicken

    Start by flattening the chicken breasts to about 1/2 inch thickness. Season both sides with salt, black pepper, and garlic powder.

    Breading the Chicken

    Set up a breading station: place flour in one shallow dish, beaten eggs in another, and a mixture of breadcrumbs and grated parmesan in a third. Dredge each chicken breast in flour, dip into the egg, and then coat with the breadcrumb mixture.

    Cooking the Chicken

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Cook the chicken for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.

    Cooking the Pappardelle

    In a pot of boiling salted water, cook the pappardelle pasta according to package instructions. Drain and set aside.

    Making the Balsamic Gravy

    In the same skillet used for chicken, add balsamic vinegar and remaining olive oil. Scrape up any brown bits from the bottom of the pan. Simmer for a few minutes to reduce slightly.

    Assemble the Dish

    On a plate, place a serving of pappardelle, top with the crispy chicken, and garnish with fresh arugula, sliced tomatoes, onions, and a drizzle of balsamic gravy. Finish with shaved parmesan on top.
