Prepare the Cauliflower Crust
Preheat your oven to 425°F (220°C). In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, and garlic powder. Spread the mixture onto a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and slightly crispy.

Make the Pizza Base
Once the cauliflower is roasted, remove it from the oven and allow it to cool slightly. Transfer the cauliflower to a clean kitchen towel and wring out as much moisture as possible. Then, return it to a bowl and mix in 1 cup of mozzarella cheese, 0.5 cup of parmesan cheese, and buffalo sauce until well combined.

Shape the Pizza
On a pizza stone or a baking sheet, press the cauliflower mixture into a round shape, about 1/2 inch thick. Bake for an additional 15-20 minutes until the edges are golden brown.

Remove the cauliflower crust from the oven. Spread marinara sauce evenly over the crust, then top with remaining mozzarella cheese, pico de gallo, and additional buffalo sauce if desired.
