Prepare the Brisket
Season the brisket with salt and pepper. In a slow cooker or oven, cook the brisket at 225°F for 6-8 hours or until tender. Shred the brisket once cooked.

Prepare the Vegetables
Thinly slice the Fresno chili and set aside. Rinse and dry the arugula. Prepare crispy leeks by frying thinly sliced leeks in hot oil until golden brown.

Assemble the Sandwich
Slice the ciabatta rolls in half. Spread horseradish sauce on the bottom half of each roll. Add a generous portion of shredded brisket, followed by arugula, Fresno chili slices, and crispy leeks. Top with the other half of the ciabatta roll.
