Preparation

- 2
If making a heart garnish, use a small paring knife or a heart-shaped cutter to trim a thin grapefruit slice into a heart shape. Set aside on a paper towel to drain briefly.
Build & Shake
- 3
Add the vodka (2 oz), elderflower liqueur (1/2 oz), grapefruit juice (1 oz), fresh lemon juice (1/2 oz), and simple syrup (1/2 oz) to a cocktail shaker.
- 4
Fill the shaker with ice (enough to three-quarters fill) and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and slightly frosted.
- 5
Strain the mixture through a fine mesh strainer into the chilled coupe glass to remove any ice shards and pulp for a silky texture.
Finish & Serve
- 6
Top gently with 2 oz prosecco to add effervescence. If you prefer a lighter fizz, add 1/2 oz club soda on top instead or in addition to a smaller amount of prosecco.
- 7
For the 'dancing heart' effect: using a dropper or the back of a small spoon, place a very small drop (about 1/4 tsp) of grenadine or concentrated raspberry syrup at the center of the drink — the syrup will sink slightly and create a heart-like blush that 'dances' as bubbles rise.
- 8
Float the grapefruit heart slice on the surface and garnish with an edible flower or a small mint sprig alongside it.
- 9
Serve immediately while the drink is bubbly and chilled.
