Prepare honey syrup

If you don't have honey syrup ready, combine equal parts honey and hot water (for example 1/4 cup honey + 1/4 cup hot water) and stir until fully dissolved. Let cool to room temperature before using. Use 0.5 oz for this recipe.

Chill glass

Place a highball or collins glass in the freezer for 5 minutes or fill it with ice water while you assemble the drink to chill it. Empty the ice water before pouring the cocktail.

Build and shake

In a cocktail shaker, add 2 oz vodka, 1 oz fresh orange juice, 1 oz fresh pineapple juice, 0.5 oz elderflower liqueur, 0.5 oz freshly squeezed lemon juice, 0.5 oz honey syrup, and a handful of ice (about 4–6 ice cubes). Secure the lid and shake vigorously for 10–12 seconds until the shaker is very cold to the touch and the mixture is slightly diluted.

Strain and top

Discard the chilling ice from your glass if used. Fill the glass with fresh ice (about 1 cup). Double-strain the shaken cocktail into the glass over the fresh ice to remove small ice chips and pulp. Gently top with 1.5 oz chilled club soda to give the drink a light effervescence. Stir once gently with a bar spoon to combine.

Thread an orange wheel and a small pineapple wedge (or tuck a pineapple leaf) on the rim of the glass. Slap the mint sprig between your palms once to release the aromatics, then tuck it into the drink near the rim. Serve immediately with a short straw.
