    Chill glass

    Place a coupe or martini glass in the freezer or fill with ice water to chill while you prepare the cocktail.

    If using egg white, separate one large egg and measure approximately half the white (about 0.5 large egg). If using aquafaba, measure equivalent volume (about 15 ml). Measure out the activated charcoal or black sesame paste and have a pinch of fine sea salt ready.

Mixing

    Dry shake

    In a cocktail shaker, combine gin, dry vermouth, elderflower liqueur, fresh lemon juice, simple syrup, orange bitters, egg white (or aquafaba), activated charcoal (or black sesame paste) and the pinch of sea salt. Do NOT add ice yet. Seal the shaker and dry-shake vigorously for 20–30 seconds until the mixture is frothy and emulsified. The charcoal or sesame will start to disperse and give a dramatic dark grey/black hue.

    Wet shake

    Open the shaker, add a generous handful of fresh ice (enough to chill rapidly), reseal, and shake hard for 12–15 seconds until the shaker is very cold to the touch and diluted slightly. This chills and integrates the ingredients while creating a silky texture from the egg white/aquafaba.

Straining & Serving

    Double strain

    Remove the chilled glass from the freezer or discard the ice water. Using a Hawthorne strainer and a fine mesh (or a fine chinois), double-strain the cocktail into the chilled coupe to remove small ice shards and any charcoal/sesame solids, ensuring a smooth, silken surface.

    Finish & garnish

    Express the lemon twist over the drink to release oils, wipe the rim with the twist if desired, and drop it into the glass. Optionally float a dehydrated lemon wheel or an edible flower on the foam for contrast. Serve immediately.

Notes

    Activated charcoal will produce a striking black/graphite color but can adsorb some molecules — use sparingly and inform guests (charcoal can interfere with certain medications). Black sesame paste provides color and a toasty note but will produce a slightly nuttier flavor and may require finer straining. Adjust simple syrup to taste if you prefer a sweeter or drier profile. If using egg, ensure it is very fresh or use pasteurized eggs for safety.
