Prepare the Pork Belly
In a skillet over medium heat, cook the pork belly until crispy. Once cooked, remove from the skillet and let it rest on paper towels to drain excess fat.

Make the Bacon Gastrique
In the same skillet, add diced bacon and cook until crispy. Remove the bacon and set aside. Pour out excess fat, leaving about 1 tablespoon. Add white wine vinegar and honey to the skillet, stirring to combine. Cook until slightly thickened, about 5 minutes. Stir in cooked bacon and set aside.

Sauté the Spinach
In another skillet, heat olive oil over medium heat. Add fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Plate the Dish
On each plate, place a portion of sautéed spinach, top with seared scallops, and drizzle with warm bacon gastrique. Garnish with crispy pork belly.
