Cooking Instructions

  1. 1

    Prepare the Pork Belly

In a skillet over medium heat, cook the pork belly until crispy. Once cooked, remove from the skillet and let it rest on paper towels to drain excess fat.

  2. 2

    Make the Bacon Gastrique

In the same skillet, add diced bacon and cook until crispy. Remove the bacon and set aside. Pour out excess fat, leaving about 1 tablespoon. Add white wine vinegar and honey to the skillet, stirring to combine. Cook until slightly thickened, about 5 minutes. Stir in cooked bacon and set aside.

  3. 3

    Sauté the Spinach

In another skillet, heat olive oil over medium heat. Add fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.

  4. 4

    Sear the Scallops

Pat scallops dry with a paper towel and season with salt and pepper. In the same skillet used for the spinach, heat a little more olive oil over high heat. Sear the scallops for 2-3 minutes on each side until golden brown and cooked through.

  5. 5

    Plate the Dish

On each plate, place a portion of sautéed spinach, top with seared scallops, and drizzle with warm bacon gastrique. Garnish with crispy pork belly.
