    Prepare the Batter

    In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. In a separate bowl, whisk together the eggs and milk until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped lobster meat and fresh tarragon.

    Heat the Oil

    In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Beignets

    Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches, making sure not to overcrowd the pan, until golden brown and cooked through, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.
