    Prepare the Filling

    In a large skillet, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes. Stir in the garlic and cook for an additional 1 minute.

    Make the Roux

    Sprinkle the flour over the sautéed vegetables and stir to coat. Cook for about 2 minutes, stirring constantly. Gradually whisk in the broth and heavy cream, ensuring there are no lumps.

    Add Lobster and Seasoning

    Once the mixture is thickened, add the chopped lobster, thyme, frozen peas, salt, and pepper. Stir well to combine, then remove from heat.

    Assemble the Pot Pie

    Preheat your oven to 375°F (190°C). Roll out one pie crust and fit it into a pie dish. Pour the lobster filling into the crust. Cover with the second pie crust, sealing the edges. Cut slits in the top crust to allow steam to escape.

    Place the pie in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown. Allow to cool before serving.
