    Prepare the Terrine

    Preheat the oven to 180°C (350°F). Grease a loaf pan and line it with parchment paper.

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a pot of simmering water or in the microwave, stirring until smooth.

    Mix Eggs and Sugar

    In a separate bowl, whisk the eggs and sugar together until pale and fluffy. Add the vanilla extract and salt.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg mixture, stirring gently to combine.

    Bake the Terrine

    Pour the mixture into the prepared loaf pan. Bake for about 25-30 minutes, or until set but still slightly soft in the center. Allow to cool, then refrigerate for at least 4 hours or overnight.

    Make the Raspberry Coulis

    In a saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens slightly. Strain through a fine sieve to remove seeds.

    Once the terrine is chilled, slice it and serve with the raspberry coulis drizzled on top.
