Marinate the Grouper
In a bowl, soak the grouper fillets in buttermilk for at least 1 hour, preferably overnight in the refrigerator.

Prepare the Dredging Station
In one bowl, combine flour, cornstarch, Cajun seasoning, salt, and black pepper. In another bowl, beat the eggs.

Dredge the Fish
Remove the grouper from the buttermilk, allowing excess to drip off. Dip each piece first into the egg mixture, then into the flour mixture, coating well.

Fry the Grouper
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the dredged grouper fillets and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
