    Prepare the Rosti Potatoes

    Grate the rosti potatoes and squeeze out excess moisture. Mix with salt and pepper. Heat a non-stick skillet over medium heat, add oil, and form the grated potatoes into cakes. Cook until golden brown on both sides, about 4-5 minutes per side. Set aside.

    Prepare the Haricot Verts

    Blanch the haricot verts in boiling salted water for about 2-3 minutes until bright green. Drain and transfer to ice water to stop cooking. Toss with olive oil, salt, and pepper before serving.

    Prepare the Flounder

    Set up a breading station with flour, beaten eggs, and breadcrumbs. Season the flounder with salt and pepper. Dredge each fillet in flour, dip in egg, and coat with breadcrumbs.

    Cook the Flounder

    In a large skillet, melt the butter over medium heat. Once melted, let it brown slightly. Add the breaded flounder fillets and cook for about 3-4 minutes on each side until golden and cooked through.

    Once the flounder is cooked, remove it from the pan and keep warm. Add lemon juice to the brown butter, stirring gently. Drizzle this sauce over the flounder before serving.

    On a plate, serve the rosti potatoes, topped with the fried flounder and drizzled with lemon-brown butter sauce. Add the haricot verts on the side.
