    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash the fingerling potatoes and cut them in half lengthwise. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for 25-30 minutes until golden and tender.

    Sear the Steak

    While the potatoes are roasting, heat a cast iron skillet over high heat. Season the N.Y. strip steaks with salt and pepper. Add a tablespoon of olive oil to the skillet, then place the steaks in the pan. Sear for 4-5 minutes on each side for medium-rare. Remove from the skillet and let rest.

    Cook the Scallops

    In the same skillet, add the remaining tablespoon of olive oil and bring to medium-high heat. Pat the scallops dry and season with salt and pepper. Sear the scallops for about 2-3 minutes per side until golden brown. Remove from the skillet and keep warm.

    Make Brown Butter

    In the skillet, add the stick of unsalted butter and let it melt over medium heat. Once melted, continue cooking until the butter turns a golden brown and has a nutty aroma. Add chopped shallots and fresh thyme to the brown butter, cooking for an additional minute.

    Assemble the Dish

    On each plate, place a portion of the fingerling potato hash, top with the seared steak and scallops. Drizzle the brown butter with shallots and thyme over the top. Serve immediately.
