Prepare the Vegetable Filling
In a large skillet, heat olive oil over medium heat. Add diced bell peppers, zucchini, and sliced mushrooms. Sauté for about 5-7 minutes until they are slightly tender. Stir in fresh spinach and cook until wilted. Remove from heat and let cool slightly.

Mix the Filling
In a mixing bowl, combine the sautéed vegetables with ricotta cheese, shredded mozzarella cheese, Italian seasoning, salt, and black pepper. Mix well until combined.

Prepare the Dough
Preheat your oven to 450°F (230°C). Roll out store-bought or homemade pizza dough on a lightly floured surface to about 1/4 inch thickness. Cut into 6-inch circles.

Fill the Calzones
Place a generous scoop of the vegetable filling on one half of each dough circle. Fold the other half over and seal the edges by pressing with your fingers or using a fork.

Bake the Calzones
Place the calzones on a lined baking sheet. Brush the tops with olive oil and make a small slit on top of each calzone to allow steam to escape. Bake in the preheated oven for 15-20 minutes or until golden brown.

Remove from the oven and let cool for a few minutes before serving. Enjoy with marinara sauce or your favorite dipping sauce!
