Calzone Dough
Method
Preparation
- 1
Make the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy. Add olive oil, salt, and flour gradually, mixing until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
- 2
Prepare the Filling
In a skillet over medium heat, sauté mushrooms, zucchini, and bell pepper until soft. Add spinach and cook until wilted. Remove from heat and let cool. Mix in ricotta cheese, mozzarella, Italian seasoning, salt, and pepper.
- 3
Assemble the Calzones
Preheat the oven to 400°F (200°C). Punch down the risen dough and divide it into 4 equal pieces. Roll each piece into a circle about 8 inches in diameter. Place a portion of the filling on one half of each circle, then fold the other half over and seal the edges by crimping with a fork.
- 4
Bake
Place the calzones on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
- 5
Serve
Allow to cool slightly before serving. Enjoy your Luncheon Veggie Calzone!
