Preparation Steps

  1. 1

    Cook the Pasta

Preheat the oven to 375°F (190°C). In a large pot, bring salted water to a boil. Add the ziti pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Eggplant

In a large skillet, heat olive oil over medium heat. Add the diced eggplant and cook for about 5-7 minutes, until softened. Add minced garlic and sauté for another minute.

  3. 3

    Combine Ingredients

In a large mixing bowl, combine the cooked ziti, sautéed eggplant, marinara sauce, ricotta cheese, half of the mozzarella, half of the Parmesan, fresh basil, salt, and black pepper. Mix thoroughly.

  4. 4

    Assemble the Dish

Transfer the pasta mixture into a greased 9x13 inch baking dish. Top with the remaining mozzarella and Parmesan cheese.

  5. 5

    Bake

Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

  6. 6

    Serve

Allow to cool for a few minutes before serving. Garnish with additional fresh basil if desired.
