    Prepare the Eggplant

    Slice the eggplants into about 1/4 inch thick rounds. Sprinkle salt over the slices and let them sit for about 30 minutes to draw out moisture and bitterness. Rinse and pat dry.

    Bread the Eggplant

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each eggplant slice in flour, dip in egg, and coat with breadcrumbs.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

    Layer the Dish

    Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of marinara sauce. Layer half of the fried eggplant slices, followed by half of the remaining marinara sauce, half of the mozzarella cheese, and half of the Parmesan cheese. Repeat the layers.

    Bake

    Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

    Remove from the oven, let it cool for a few minutes, and garnish with fresh basil leaves before serving.
