Make the Pasta Dough
In a large mixing bowl, combine the all-purpose flour and a pinch of salt. Create a well in the center and add the egg yolks and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into smaller pieces. Roll each piece out into thin sheets using a pasta machine or rolling pin. Cut into thin strips to form tagliatelle or tajarin.

Prepare the Sauce
In a small pan, sauté the black garlic in olive oil over low heat until fragrant. Remove from heat and stir in the truffle oil and fried black pepper.

Cook the Pasta
Bring a large pot of salted water to a boil. Add the freshly cut pasta and cook for 2-3 minutes until al dente. Drain and reserve a cup of pasta water.

Combine Pasta and Sauce
In a large mixing bowl, combine the cooked pasta with the black garlic sauce. Add reserved pasta water as needed to reach desired consistency. Toss gently to coat.

Serve
Plate the tajarin and garnish with additional fried black pepper and a drizzle of truffle oil if desired. Serve immediately.
