Prepare the Mushrooms

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Cook the Mushrooms

Add the wild mushrooms to the skillet. Sauté them for about 5-7 minutes until they are tender and have released their moisture. Stir in the fresh thyme, salt, and black pepper.

Add Balsamic Vinegar

Drizzle the aged balsamic vinegar over the cooked mushrooms and stir well to combine. Allow to cook for an additional 2 minutes.

Prepare the Toast

While the mushrooms are cooking, preheat your oven to 200°C (400°F). Slice a baguette or rustic bread into 1/2 inch slices, arrange on a baking sheet, and brush lightly with olive oil. Toast in the oven for about 5-7 minutes until golden.

Assemble the Bruschetta

Remove the toasted bread from the oven. Top each slice with a generous spoonful of the mushroom mixture. Crumble the smoked farmer's cheese over the top.

Drizzle a little extra balsamic vinegar on top if desired, and serve warm.
